One pot creamy pasta with spinach and sundried tomatoes

Boil the spinach according to instructions and drain. Hidrate the sun-dried tomatoes and chop them.

Slice the garlic and sauté in a sauce pan with the chilli flakes until golden.

Add about 200 ml of water and bring to the boil. Add the pasta and cook according to instructions. If you like your pasta al dente reduce the cooking time 2-3 minutes.

Add the oat milk to the sauce pan along with the chopped sun-dried tomatoes and boiled spinach.

Add black pepper to taste and enjoy a tasty dinner!

It takes some time to nail the ratio boiling water:oat milk to prevent it from being too watery, in my experience reduce the amount of water (it doesn’t matter if the pasta is not covered, just stir it so it’s cooked evenly).
