Rice noodles with shiitake mushrooms

Bring water to boil and cook the noodles as explained on the package.

In the meantime, wash and cut the peppers into small pieces. Wash the mushrooms and cut them in half.

Sauté the bell pepper and mushrooms in a frying pan with a little EVOO over high heat, until they begin to brown a little.

Meanwhile, prepare in a glass the sesame seeds, the date paste, the soy sauce and add a splash of water. Mix well and add to the pan. Lower the heat to medium-high (6/9) and cover. Let it cook until it reduces completely.

Finally, mix everything in a bowl or in the serving dish.
