For the batter: Mix 1 cup rice drink (200ml) and 1 tbsp apple cider vinegar. Let stand 5 min and add melted coconut oil (80ml) and 100g of date paste. Mix until the panela is dissolved.

Mix 250g of whole wheat flour, 1 teaspoon of baking soda and a pinch of salt. Add the liquid mixture from step 1 and mix well. Divide the dough into 3 equal parts and preheat the oven to 180°C.

Chocolate and walnut muffin 🖤 Add 2 tablespoons of cocoa powder and 5 chopped walnuts to the batter.

Blueberry muffin 💜. Add 50g of fresh blueberries to the batter. (Optional: 1 pinch of dried lavender).

Lemon and cinnamon muffin 💛 Add 1/2 grated lemon and 1 teaspoon of ground cinnamon to the batter.

Place the dough in muffin pans and bake 15-20 minutes at 180°C. Remove and add the chopped dark chocolate on top of the chocolate muffins and let stand 10 min.

Lemon cream 🍋 Mix 1 cup rice drink, 70g date paste, juice of 3 lemons, zest of the 3 lemons, 3 tbsp cornstarch and a pinch of turmeric. Heat and stir until thickened and remove before boiling. Add the cream on top of the lemon muffins and that's it!
