🔺For the Spanish sauce One sweet onion Two cloves of garlic 2 tbsp of olive oil 200 ml of broth or water 2 tbsp tomato concentrate 50ml of white wine Salt, pepper, nutmeg, cloves and fresh parsley

We put the oven to preheat to 180 degrees. I grind my meat, I like the result better, you can use what you prefer. We put in a food processor of the ingredients for the meatballs the carrot, garlic, bread and parsley. Beat well and add the egg yolk, milk, salt, nutmeg, cinnamon and pepper. Mash well.

Put in a bowl and add the pine nuts. Form medium-sized balls and roll them in the spelt flour.

Place in a greased baking dish and bake for 10 mini minutes, then turn over for another 6 or 7 minutes.

Meanwhile we prepare the sauce: We sauté the onion and garlic in the aove for about 5 minutes. Add the tomato, integrate well and sauté for another minute. Add the wine and let it evaporate for a couple of minutes.

Add the water, salt, nutmeg, pepper and ground cloves. Cook for 5 minutes and add it to the meatballs. If you want a finer sauce, grind to taste.

Bake for another 10-12 minutes at 190 degrees and you're done!
