Roast the pumpkin in the oven or in the microwave with plastic wrap until it is soft. (We can substitute the pumpkin for sweet potatoes).

Preheat the oven to 200°C while preparing the mixture of ingredients.

Beat the eggs together with the flour and the yeast so that they are properly integrated, then add a spoonful of EVOO, the date paste and the cinnamon to taste.

When we have the pumpkin, we grind it into a paste and mix it with the rest of the ingredients.

Put the dough into doughnut pans and bake at 180°C for approximately 15 minutes (depending on the oven).

Let cool to unmold, and add the topping you like. This time I melted 3 ounces of 85% chocolate and homemade granola. Enjoy!
