Make the quiche dough by mixing the flour, water, oil and a pinch of salt. Form a homogeneous ball and stretch it with the help of a rolling pin. We put it on the mold that we are going to use with baking paper underneath so that it does not stick. I cut out a few flowers with the edges that I had left over.

Prick the dough with a fork and bake at 190° until almost cooked through. Remove from the oven.

Chop the vegetables, onion, zucchini, and pumpkin, sauté them with a little oil, and add the serrano ham also chopped.

For the mixture: we grind the cream, the gorgonzola cheese and the eggs, the spices too. Chop the Havarti cheese (or you can use grated cheese, I didn't have any) and add it to the mixture WITHOUT MASHING. Mix with the vegetables and put it all in the base. I decorated it a little with the raw pumpkin.

Bake in the oven at 180° for 30-40min. It depends on the oven and the amount of filling you put in. My oven heats more on one side than the other and I got two colors 😆.
