Put the rice, milk or vegetable drink, lime peel and ginger in a large saucepan.

Cook over medium-low heat for about 25 minutes, stirring occasionally.

At the end add the coconut milk and the date paste. Stir well and cook for 3 more minutes. The rice should be soft and not too thick, as it will thicken as it cools.

Turn off the heat, remove the lime peel and the piece of ginger and divide the rice pudding into glasses or bowls. Let cool to room temperature and then store in the refrigerator.

To serve, top with a few pieces of mango and desiccated coconut.
