Prepare the base: Mix the oat flour with half an egg, a tablespoon of date paste, a tablespoon of melted coconut oil, a teaspoon of milk and a pinch of salt. Spread it on the base and sides of the mold and refrigerate.

Prepare the filling: Mash the apple with the ricotta and mix with one and a half eggs, 1-2 tablespoons of date paste, zest of half a lemon, a little cinnamon and a handful of fresh whole blueberries. Add it on top of the base.

Bake at 180 degrees for 35 minutes. Meanwhile, prepare the blueberry jam: In a saucepan heat fresh blueberries with a squeeze of lemon and date paste until boiling.

Serve the blueberry jam over the tart and refrigerate.
