Mushroom croquettes 🍄

Chop the garlic and onion and poach it over low heat. Add salt to taste.

Add the mushrooms (if they are frozen, defrost previously), chop them and poach them together with the onion and garlic for about 5 minutes.

I then ground it all up and added it back to the pan but if you chop it well you don't need to grind it.

Add the flour and cook for a couple of minutes, stirring constantly. Season with pepper and nutmeg to taste and add the soy milk (any milk can be used, as well as any flour) and stir until it thickens.

Put the dough in a bowl and cover it with plastic wrap in contact with the dough to avoid crusting. Let it cool to room temperature and put it in the refrigerator for at least 3 hours.

Roll the croquettes (we can pour a little oil on our hands to prevent sticking).

Beat the eggs, mix them with the croquettes, drain and coat them in breadcrumbs (you can do this step twice to make them crunchier). Fry and ready!
