⚠️Si the cod you have bought it salted then we leave it in water 24 hours, I put it in the morning, at night I change the water and take it out the next day. ⚠️

Add the butter to melt and then the flour. Cook a little so that it does not taste like raw flour. And we add little by little the milk. Stirring continuously so that there are no lumps.

According to my mother the trick to know that the dough is done is that when you remove it with the spatula the bottom should be clean, that is to say that the dough comes off easily. It should have a texture so that it is easy to shape. The amount of milk may vary because I didn't measure it exactly 🙈🤦🏻♀️ don't hate me haha but more or less that way it goes!

When it is done, add salt, I did not add anything because the cod has enough salt, but it will depend on whether it has been left in water or not. So add salt if necessary.

Cool in a container covered with plastic film to prevent the dough from drying out (film in contact with the surface) and when it is cold, remove and shape the dough into small balls.

Dip first in beaten egg and then in breadcrumbs. I fried them in EVOO, but you can bake them in the oven or in an air fryer.
