Heat the water without boiling and dissolve the yeast.

Make a volcano in the flour, add the water and yeast mixture, the EVOO and the rest of the ingredients.

Knead for at least 10 minutes and let stand in a bowl with a kitchen towel for 2 hours.

Preheat the oven and knead again.

Divide the dough into 4, place it on the baking tray and make the bread marks in the shape of a cross.

Bake for about 45 minutes at 200°C up and down heat. My oven is not very powerful.

I put the bread on the rack and used the tray to put water in it and create steam (it gives it the crunchy touch). But by using the rack the base of the bread does not come out 100% uniform.
