For the base, mix the ground almonds with the oat flour and add date paste until a dough consistency is obtained (if you wish you can add a little cinnamon powder to the mixture to increase its flavor), flatten in the base of the mold and put it in the airfryer for about 6 minutes at 190 degrees (you can leave it more if you like it more done and crunchy).

In a saucepan over low heat, infuse the milk with half a vanilla pod, a stick of Ceylon cinnamon and the zest of a lemon. After about 5 minutes add the cream cheese, the juice of 2 limes and the date paste to sweeten. Continue stirring and cooking over low heat, tasting the mixture and modifying it to suit your personal taste.

Once the desired taste is achieved, remove the cinnamon, lemon zest and vanilla pod. With the mixture still on the heat add the previously hydrated gelatin sheets and stir for about 5 minutes.

Pour the mixture into the cookie mold through a strainer and place in the refrigerator to cool until the mixture thickens (at least 1 hour).

Decorate the top with raspberries or the fruit of your choice.
