Before starting 🙋🏻♀️ - These quantities are enough for 10 cookies - The date paste is made by crushing pitted dates (which have been previously soaked for about 10 minutes) with a little of the same water. - In my case I chose raspberries and kinder crunchy cream (previously frozen in an ice cube tray) as toppings. To make the kinder crunchy cream you need to mix the following in a small bowl: 📝 20 g semi-skimmed milk powder 📝 10 gr date paste 📝 25 ml Yosoy chocoavena drink 📝 10 gr chopped hazelnuts - You can choose to leave the cookies without toppings, they will be like the classic pastries/campurrianas.

Prepare a baking tray with parchment paper or a silicone mat. To help you, you can take a pencil and go marking circles with the butt of a glass on the baking paper, so it will serve as a guide to form the pastries.

We put a nut of EVOO in our hands, so the dough will not stick to us when we handle it. We begin to take portions of the dough and make little balls with it.

Flatten the balls that we are forming a little bit and put them on the baking paper. Repeat the process until all the dough is finished. We can give them any shape we want, but keeping in mind that they will increase in size in the oven.

Once we have all the pastries prepared on the tray, we take a fork and pass the tips over them. This is decoration, you can do without this step, but they are more attractive this way 😏.

Finish decorating them by putting pieces of raspberries on top and pressing a little. Add the frozen kinder cream. As I said in the previous step, you can also do without these toppings, put other toppings or whatever you want. One option is to leave them without topping and then use the cream to dip them in it 🌚 It will be for wicked and greedy ideas here 🙈

We put the tray in the oven and leave them for 15 minutes at 180° with heat up and down.

Once the time has elapsed, we take them out and let them cool on a rack. and ready! ✨

The interior 💕

In a bowl put the 120 gr of ground oats, the 40 gr of almond flour, the tablespoon of cinnamon (2 gr) and 4 gr of baking powder.

Mix well.

In another bowl, beat an egg very well and mix it with the 100 grams of date paste.

We take 50 gr of unsalted butter (there are jars of individual doses, it would be 4 units in that case) and we put it to melt in a glass in the microwave. It will take less than 1 minute at medium/high power to melt it.

Add it to the bowl along with the egg and the date paste, and mix very well and quickly.

Preheat the oven to 180° with heat up and down.

Add the dry ingredients (the flours, yeast and cinnamon mixed together) to the bowl of wet ingredients. Mix with a whisk by hand until a sticky dough forms.

We are going to form the dough with our hands, so the ideal would be to get an ice cream spoon (this helps us to take the same amount of dough for all of them, if you do not have one, do it the usual way or with a normal spoon).
