Spinach Crepes with Béchamel Sauce

CREPES: Incorporate the spinach, eggs, 100ml of milk, a tablespoon of flour, a dash of AOVE, a pinch of salt and a little ground pepper in the blender beaker and blend until liquid.

Heat a frying pan with a little EVOO, pour a ladle of dough, cook until it hardens and turn over to brown on the other side.

BECHAMEL: Cook the mushrooms in a frying pan with a little EVOO, once browned, add the butter.

Once melted, add the 20g of flour and stir until golden brown, pour the 250ml of milk little by little while stirring the dough.

Add a pinch of salt, nutmeg and black pepper to taste. Continue stirring until it thickens and has the desired texture.

Finally, fill the crepes with the béchamel sauce.
