Put the flour in a bold. Make a hole in the middle and add the butter and salt. Knead

Then add the vanilla, 2 complete eggs, and the orange or lemon zest. It should contain 100 gr of sugar but as in my case I do not take sugar I have added a spoonful of liquid stevia. We knead. Note*. If it sticks to your fingers you can add more flour until it is compact.

With the previous dough we will create a ball and we will flatten it a little. Wrap it in transparent paper and let it rest in the fridge for 30 minutes.

After the time has elapsed, remove the dough, place it on a clean worktop and roll it out with a rolling pin. The thickness should be 4mm. Spread on our mold (previously bathe the mold with butter or coconut oil so that our cake does not stick) and cut the edges to make it uniform. Prick with a fork all the dough.

Fill with whatever we want. In my case with jam. It is also very good with chocolate. Preheat the oven to 180°. Jam: in a pan put the chopped fruit and let it melt. Once this is done, add chia seeds. Here I have also added a little stevia.

With the trimmed edges from step 3 we make another ball of dough. Spread again and cut in thin lines to decorate.

We put it in the oven and calculate 30-40 min. until it is golden brown.
