Preheat the oven to 170°. Grate the carrots. I used 4 medium ones. Mix with the two eggs, the yogurt, the teaspoon of vanilla, the handful of raisins and the grated coconut. Blend in a blender and set aside.

In another bowl add the dry ingredients: 80gr of whole oat flour and another 80gr of whole wheat Spelt flour. The spices (this is up to each one's taste). Mix everything well and add to the wet ingredients until everything is well integrated. Add about a tablespoon or two of milk and mix again. Add the chopped pecans and the two teaspoons of EVOO and mix again.

Once everything is well integrated, add the teaspoon of baking soda and a squeeze of lemon, this will make it rise more and give it a fluffier texture.

Pour into a baking dish and decorate with more pecans and sprinkle a little cinnamon on top.

With the oven already hot add the cake to the oven for about 30 minutes at 180°. It will be ready when we prick it with a toothpick and it comes out clean.
