Matcha tea and strawberry sponge cake

First you have to soak the dates (5) in 150ml of hot vegetable drink, a little, 10-15 minutes. Oat drink is better because it is sweeter.

Then I mixed the dry ingredients in a bowl: I put 140gr of spelt flour, 60gr of oat flour, half a sachet of baking powder, cinnamon (a lot because I love it), a little nutmeg and matcha tea for baking (a spoonful).

Then I crushed the dates with their drink, and added all the wet ingredients: 1 egg, vanilla essence, and the coconut oil (it was solid and I took about 3 tablespoons, about 30-35gr) and crushed it all together.

Then I added the dry ingredients little by little to the wet ingredients and kneaded well. Then I put it in the silicone mold, filled half of it, put a layer of sliced strawberries and filled with the rest. On top cinnamon and more strawberries.

Then bake it in the oven at 180° for about 40 minutes (keep an eye on it because it will depend on the oven) so that it is done but juicy. When you take it out, put it on a rack to cool.
