Whole wheat spelt bread in the breadmaker

FOR THE POLISH: Mix 300g of flour, 300g of warm water and 1g of dry yeast in a bowl with a lid. Mix everything together and leave in a warm place to rest: on a radiator, in a warm oven turned off, on a radiator. Let stand for about 2 hours. It will be ready when it has increased in volume and you see bubbles.

Once the polish is ready, put in the bowl of the breadmaker in this order: A dash of EVOO, 150g of warm water, the polish, 300g of spelt flour, 12g of salt and 1'5 g of yeast (put the yeast and salt in opposite corners of the bowl).

Program in the fluffy program of the breadmaker, weight 1250g and medium toast. At the first beep of the breadmaker we can add a handful of seeds to integrate them with the dough. Once we take out the paddles we can sprinkle a little flour on the bread and let the program run its course.
