Preheat the oven to 180°.

Mix dry ingredients in a bowl (oatmeal, chickpea flour, shredded coconut, salt and baking powder).

Add the olive oil, egg and date paste (I added 3-4 tablespoons, but you can add to your liking). Beat very well

Add the chopped chocolate to the mixture as if they were cookie chips.

With the help of a spoon, make small balls with the dough and place them on a tray with baking paper. Flatten the balls and shape your cookies.

Bake at 185° for 10 minutes.
