Mix the oats, spelt and flax. For the oats, I used flakes that I crushed, and for the flax, seeds that I also crushed.

Add the salt and the yeast and stir everything dry.

Add the yogurt and water and stir. It is not a texture to knead by hand. I used a spoon, as it is very sticky. Let it rest for an hour.

Pour the dough into a baking pan lined with parchment paper. Bake in the oven at 210º with heat up and down for 20 minutes. Then, with heat only below, another 30 minutes. I have added a glass of water in a tray at the bottom of the oven to create humidity.
