In a casserole with EVOO, sear the cod on both sides. Set aside.

Cut the vegetables into small cubes. In the same pan, sauté until the spring onion is transparent.

Add a spoonful of spelt flour and fish stock or fumet. Stir until there are no lumps.

Add the desalted cod and cover. Cook over low heat for 15 minutes.

When ready, add the shrimp and cover again. Cook until the shrimp are cooked and the sauce is reduced.
