Mix the flour with the salt in a large bowl. Add the olive oil.

Add the water little by little because depending on the type of flour you may need a little more or a little less. Stir first with a fork and then knead with your hands.

Knead very well. The dough remains manageable so it is important to control the amount of water.

On a lightly floured surface or on a piece of parchment paper, flatten with a rolling pin and create a thin (not too thin, as it may break) sheet.

Cut into squares (as large as you like).

Fry the spinach in a frying pan with a drizzle of oil, put it in a bowl and mix with the ricotta cheese. You can add more or less cheese according to taste.

Put a little of the spinach and ricotta mixture on half of the squares and place the rest on top. With a fork join both squares of dough so that they do not open.

In a pot (the bigger the better so that the ravioli have space) with boiling water carefully put the ravioli and let them cook. Move very carefully so that they do not break and do not stick together. The ideal is that they are a little hard (approx 15 min but go checking depends on several factors).

Remove carefully and serve with your favorite sauce, in my case walnut 🤤 and enjoy.
