We put the dates (quantity to taste of sweetness) to soak at least 10 minutes. Chop/grate the carrots and set aside.

In a bowl mix the oatmeal, milk, eggs (can be replaced by eggs made from flax), vanilla flavor, cinnamon and date paste (after 10 minutes of soaking we will have left water only until it covers them and crushed until it is a paste). We grind everything very well until it is a homogeneous mass and we add a little more than half of the carrot chopped previously. Mix it with the dough with a spoon.

If we prefer, we can pour the mixture into a jar to pour it more easily into the pan, or directly with a ladle from the bowl.

We put a splash of EVOO in the pan and spread it with a little paper. Pour the amount of dough according to the size we want for our pancake and wait for some bubbles to come out and turn it over.

Make a tower with the pancakes and pour the froosting on top, the remaining grated carrot and a little cinnamon. Reserve a little of the froosting to spread on each pancake and that's it.
