Cecina and goat cheese croquettes 🧀

Grind the jerky and set aside.

Cut the chives into very small pieces and sauté them in a frying pan with the EVOO and butter.

When it is done, add the spelt flour and toast it a little.

Add the milk, salt (to taste) and half of the jerky. Stir well until the béchamel thickens. Before it thickens completely, add the diced goat cheese and continue stirring so that it melts and integrates.

When it is ready, add the remaining jerky and mix well. Let it cool completely (I usually leave it overnight).

Make balls of the desired size and roll them in spelt breadcrumbs, then in beaten egg and finally in breadcrumbs again.

Bake, with the oven preheated to 180°C, until golden brown. I had them for about 15 minutes, be careful not to overdo it because the filling comes out.
