Mix the ground almonds, roasted sweet potato and date paste in a bowl until smooth.

Separate 125gr of the dough and add 60gr of grated coconut. Give it the desired shape.

Separate 125gr of dough and add 60gr of roasted chestnuts. Give it the desired shape.

Separate 125gr of the dough and add one or two tablespoons of pure cocoa. Give it the desired shape.

With the rest of the dough we will make the pine nuts and almonds ones. Give them directly the shape we want.

Separate the egg whites from the yolks. Beat the egg whites.

Coat the "normal" panellets with the beaten egg whites and the pine nuts or chopped almonds.

Put all the panellets in a tray and paint them with the yolk of the eggs (except the coconut ones).

Put them in the oven for 15' with heat up and down (previously preheated). If we see that in 15' they have not browned, leave them a few more minutes with air.
