Vegetable quiche with whole wheat base

Mix the ingredients for the base (whole wheat flour, water and oil), flatten it with a rolling pin until it is thin and circular. Put it on a baking sheet with parchment paper, prick it with a fork and bake it in the oven at 200°C for about 15 minutes.

For the filling: sauté the eggplant and onion with EVOO, garlic powder and basil to taste.

Beat the eggs with the whipped cream cheese and mix with the vegetables. Pour this on top of the baked base.

Add the sliced tomato and goat cheese. Sprinkle more basil, to taste.

Bake for about 35 minutes, until golden brown.
