First, pour a good splash of EVOO in a frying pan. Once hot, add the onion and fry it. Add the ham and sauté for a couple of minutes.

Secondly, we add the flour and integrate it. It is important to brown it so that it does not taste raw. When it is well browned, we add the milk little by little, stirring constantly (I recommend using a whisk, it has been easier to remove the lumps). It is important, as I said, that there are no lumps.

When the mixture is thick, add the spices to taste. It should come off easily from the pan. We put it in a bowl, with cling film in contact with the mixture so that it does not crust, and leave it in the refrigerator for a few hours, until it is compact. I left it for a whole day.

Now we beat the eggs and in another bowl we put the cereals well crushed (you can grind them). We make the shape of our croquettes, dip them in the egg and then in the cereals. With the oven preheated to 200°C, put the croquettes on the baking tray and let them brown on the outside, about 15 minutes. READY! 🙊
