First of all, fry the onion with a little olive oil and when it is golden brown add the chicken breast already coded until it is ready.

Then add the flour and stir until it is well integrated and then little by little and stirring constantly, add the milk until the mixture is homogeneous, neither too liquid nor too thick.

Then add butter and salt and stir well until the mixture is completely homogeneous.

Once the mixture is ready, put it in a Tupperware or in a container, cover and let it rest for 4 hours in the refrigerator.

After 4 hours we make the croquettes with the help of our hands (I made them round). First we pass them through the wholemeal spelt flour, then through egg and finally through the breadcrumbs.
