POTATO NESTS WITH ZUCCHINI DUMPLINGS

Start by chopping the garlic and browning it in the pan with a little oil.

Peel and grate the zucchini. Drain it as much as possible, to remove excess water.

*We accompany it with the sauce of our choice.

Add the zucchini to the pan where we are browning the garlic and sauté for about 10 minutes over medium heat. It will lose most of the water and start to brown.

When the zucchini is cooked, put it in a bowl and add the egg, bread crumbs, grated cheese and basil. If necessary, correct the salt.

Mix everything until you have a homogeneous dough. Take portions and make small balls. Set aside.

Boil the potatoes and mash them with a fork. Season with salt and pepper and stir.

We take portions, make balls and flatten the middle to make the shape of a nest.

Place the nests on parchment paper on the oven tray, pour a spoonful of fried tomato in the nest and place the zucchini meatballs on top.

Preheat the oven to 200º with heat up and down.

Add a little grated cheese on top and bake in the oven for 15-20 minutes at 200º.
