Put the slices in hot water. In a frying pan with a little oil add the onion, the bell pepper, the mushrooms and the carrot (grated). Cook for a few minutes.

Add the hydrated soybeans and tomato sauce, cook for 10 minutes over medium-low heat.

While it is cooking, in a frying pan add the oil and the spelt flour, until a dough is formed. Gradually add the milk (hot), stirring constantly. Stir until it thickens

In a bowl, make the layers and top with the bechamel sauce.

I added some vegan cheese and baked it in the oven for 5 minutes, but this is totally optional.
