Slice a large zucchini (or one and a half) into long thin strips (I did this using a cheese grater/potato peeler). Put it on a plate 2 minutes in the microwave to dry it.

On the other hand, cut the vegetables (I have put carrot, eggplant, onion, green bell pepper and a little of the zucchini that I do not laminate). Put them in the frying pan and fry them with a little EVOO. When they are golden brown add a spoonful of flour, a little milk (oat milk or whatever you like), a spoonful of grated Parmesan cheese, salt and pepper to taste.

Turn off the heat, add a can of tuna to the mixture and stir. Let stand for a couple of minutes to cool slightly.

Lay 3-4 zucchini slices on top of each other. On one edge, put the vegetable mixture and roll up the zucchini to form a cannelloni. Place in a baking dish with the part that closes the cannelloni down. Form cannelloni.

Crush 2/3 tomatoes with a little salt and oil (you can also use tomato sauce directly). Pour the tomato sauce over the zucchini.

Put in the oven at 180^ for about 15 minutes. Remove and sprinkle the grated parmesan cheese on top. Gratinate for about 7 minutes more. Ready!
