Put the oat flakes in a bowl and spread the EVOO oil on top.

Add the date paste and stir.

Add the lightly beaten egg and egg white.

Add raisins to taste.

Mix all the ingredients by hand. It will be a sticky dough, we spread our hands with a little oil, we take portions of the dough, round and flatten pressing with our fingers on the tray covered with baking paper. The size and thickness of the cookies will be to the taste of each one.

Bake at 180° for 10/12 minutes until golden brown.

Take them out and let them cool until they become crispy.
