Mix the dry ingredients

Whisk the egg whites with the zest of one lemon and one lime.

Add the juice of half a lime and a little lemon juice. Add the Greek yogurt. Whisk until blended.

Add the rest of the ingredients and beat until blended.

Pour the batter into a non-stick baking pan or greased with EVOO. Bake at 180C, heat up and down for about 25 minutes. Check if it is done by pricking with a toothpick.
