Spinach and shrimp quiche

For the base, mix 1 egg with the spelt flour and 40g of EVOO.

You will have a "sand" type dough that you will have to mold on a baking paper in the container you are going to use.

Once shaped, bake in the oven for 10 minutes at 200 degrees.

The dough will release oil that can be removed later with absorbent paper.

For the stuffing. Cook the shrimp and peel them.

Clean and cut the vegetables, and sauté them until golden brown.

Beat four eggs and mix them with the egg whites, salt and spices.
