Preheat the oven to 250° up and down heat with fan.

Beat all the liquid ingredients (eggs, egg whites, yogurt, vanilla, date paste and EVOO) with a whisk or by hand until creamy (about two minutes).

Mix the flours with the yeast, cinnamon and salt and mash with a fork so that there are no lumps and add to the liquid ingredients. We beat 30 seconds more to integrate.

Serve in a small baking pan previously greased with AOVE and bake at 250° up and down heat with fan for approximately 20 minutes (until you prick it and the toothpick comes out clean).
