Rinse the quinoa very well, about 2 minutes rinsing under the faucet in a colander. Then let it soak for at least 3 hours

After 3 hours we rinse again well and grind in a blender with 40 ml of clean water, salt, pepper and the spices you like, basil, oregano... whatever you want. Preheat oven to 200 heat up and down.

Brush a baking paper with a little oil on the baking tray and add the dough in the center and create a large circle with the help of a spoon without leaving any holes and bake in the oven for 6 minutes at 200 degrees up and down without fan.

Check if the dough comes off and if so, turn it over and place it with the paper on the oven rack and pour the grated mozzarella over the dough first to create a layer that avoids wetting the dough. Add the toppings of your choice. In my case I previously roasted an eggplant in the oven with pepper and a little olive oil and took out the pulp to which I added tuna, blue cheese and fried tomato and this mixture I poured over the cheese, some thin strips of onion. Then a little cheese on top, oregano and baked for another 10 minutes.
