In the pressure cooker, sauté the onion and when it is ready, add chopped tomato and poach.

Once poached, add the cabbage, green beans, carrots, salt, spices, Ras al Hanut and water and close for 10-15 minutes.

Add pumpkin, sweet potato, zucchini, chickpeas and close again for another 10 minutes.

The cous cous can be bought instant which is much faster than the traditional one. Once done, add raisins and dried apricots. (This if done in a separate pot).
