Broccoli and feta cheese croquettes baked in the oven

Wash the broccoli and cut into small pieces. Boil with water until sufficiently soft.

Meanwhile in a frying pan put a teaspoon of EVOO and cook the onion cut into small pieces. Remove from the heat when it begins to brown.

Mash the broccoli with a fork and mix in a bowl with the onion, chopped feta cheese, garlic powder, salt and two previously beaten eggs. Stir well.

Preheat the oven to 210°.

To form the croquettes, it is important that all the dough is well mixed, so that the egg reaches all the broccoli. I take the amount that is in a spoon and with my hands I give it the shape of a croquette, and I place them on the oven tray. Keep in mind that at first they are not going to be completely compact, but that will not be a problem because in the baking they will be well done (I prefer not to use breadcrumbs). The important thing is to give them the desired shape.

Put the croquettes in the oven for 25 minutes at 210° (turn over after 15 minutes and put back in the oven for the remaining 10 minutes).
