With the help of a peeler, cut the zucchini into thin strips and then boil each strip for 1 minute.

Once we have boiled the strips (I boiled them all at the same time), drain them very well and you can plate them. Add the spices.

Add the burrata on top of the boiled zucchini strips. Optional: You can give it a touch of microwave for about 15 seconds.

For the red pesto, it is as simple as crushing the sun-dried tomatoes together with the EVOO, grated Parmesan and pine nuts. If the mixture is too solid, add a teaspoon of water.
