Chinese style chicken with almonds

We start by cutting the vegetables. Wash the peppers and cut them into strips. Peel the onion and cut into thick pieces, separating the layers. Peel the carrot and cut it on the bias (diagonally).

Heat a frying pan with olive oil and brown the vegetables, I left them a little crispy.

Cut the chicken into cubes, season with salt and pepper and add it to the frying pan with the sautéed vegetables. Brown the chicken.

In the meantime, peel the almonds. Put the almonds in the pan.

Pour the chicken broth, dilute the cornstarch in a glass with a little water and add it to the pan. Mix everything and let it cook until the sauce has thickened.
