We prepare all the ingredients. I buy the coconut milk I use at Lidl, which has a high percentage of coconut (91%) and is very tasty.

Put in a small pot all the contents of the can of coconut with its water, 200ml of coconut drink, the vanilla pod opened and the seeds removed, the crushed cardamom with the shell and 2 tablespoons of erititrol. Let it infuse for 5 minutes.

Put the remaining 75 ml of coconut drink in a small glass and dissolve the sachet of agar-agar in it. We also add the teaspoon of tapioca and stir well.

Pour the contents of the cup into the pot and let it boil for another 5 minutes, stirring and remove from the heat.

Remove the vanilla pod and the cardamom peels and pour into small jars. When cool, put in the refrigerator for a few hours to set.

Take them out and decorate to taste. I put strawberry, raspberry, apple and currant jam, some blueberries, raspberry, pitahaya, mint leaves and grated coconut.
