First, hydrate the texturized soybeans for about 15 minutes. Meanwhile we cut the onion, carrot, zucchini and take to the pan with a drizzle of AOVE.

When the vegetables are done, add the crushed tomato and a handful of peas until the tomato is done.

While the vegetables are being finished we are going to make the meatballs: We drain the soybeans, add an egg, a handful of peas, flour, salt and spices. The spices are key to give them flavor. We beat the mixture and form balls.

I put them in the Airfryer at 180º for 10 minutes and when they are a little browned I mix them in the pan with the tomato and vegetables.
