For the ratatouille: chop the onion, bell pepper and zucchini into small pieces.

Fry the onion and bell pepper in 1 tablespoon of oil over medium/low heat with a pinch of salt until the onion is transparent.

Add the zucchini and cook for 5 more minutes. Add the tomato and let it cook until the tomato loses all the water. Correct salt.

Season the two cod loins with salt and pepper, add a teaspoon of oil on a griddle and once hot, cook the cod. First on the skinless side and then on the skin side. The time will depend on the thickness of the fish but it is done in no time!

Ready, assemble the dish and eat! It is a great dish to leave the ratatouille prepared the day before and on the day, make the fish and that's it! Quick and delicious
