Soak the dates in hot water for 10 minutes.

Grind the walnuts with the grated carrots.

In another bowl, beat the dates with 120 grams of milk until a paste is formed.

Add the date paste together with the carrot and walnut mixture and add two eggs, the flour, cinnamon, baking powder and oil.

Once the mixture is ready, grease a baking pan with coconut oil and bake in the oven for 30 minutes (I preheated the oven when I started to make the recipe).

While the sponge cake was being made, I made the topping (beat 150 grams of cheese spread with 50-80 ml of milk and the rest of the dates and let it cool in the refrigerator or freeze a little if we want it thicker).

Once the sponge cake is ready, let it rest and when it cools, pour the topping and add nuts.
