First we peel the potatoes and put them to stew. These are the ones I used.

In a blender glass we put the chopped onion, the green bell pepper, the hot pepper (it is one that is here in La Palma but I suppose that you can find a similar one somewhere else), the vinegar, the cumin, the black pepper and the garlic powder. We grind it and set it aside.

We should be left with something like this.

Grate the cheese and set aside.

When the potatoes are ready, we crush them and add in equal parts the gofio and the mojo that we got. Knead with your hands.

I like it with a veneer, but some people do it looser. In my case it looks like this.

Add the cheese and knead with your hands. Leave a little of the cheese to put at the end.

And at home we eat it with fruit. Grapes or plums but I can eat it with whatever you want.
