Pasta with avocado, parmesan and salmon sauce

First, we cook the pasta. I like to add a few bay leaves and salt when it is boiling.

While it is cooking, peel half a ripe avocado and mash it with a fork until it is mashed. Season to taste with pepper, hot paprika, garlic, salt and EVOO.

Add the grated grana padano cheese and the chopped salmon, stir well and wait for the pasta to cook. When it is to taste, add two tablespoons of cooking water to give it more sauce consistency and flavor.

Mix everything in the same pot, making sure to mix all the ingredients well, and enjoy!
