Stir-fried rice noodles with vegetables, shrimp and soy sauce

Cut the vegetables and sauté them in a pan or wok with oil, a generous splash, with 1 or 2 cayenne pepper (chili) as you like spicy (I used 2 🔥🔥). I used the vegetables I had in the fridge: 1 zucchini, 1 leek, 2 carrots, 1/2 red bell pepper and 1/2 yellow bell pepper, but accept all the ones you like or have on hand. We can also grate a little ginger or if you have it can be in powder also.

While they are sautéing, boil water to cook the rice noodles according to the instructions on the package, in my case 3 or 4 minutes, drain and set aside.

When you see that the vegetables are to your liking, I like them al dente, add the shrimp tails, a package of about 200 grams, and sauté everything together with the lime juice.

Finally add the noodles and 2 or 3 tablespoons of soy sauce, depending on how strong you like the flavor (I put a generous splash 😋), sauté a little more and serve.
