Mushroom, onion and broccoli pie

First, let's go with the vegetables. Steam the broccoli for about 5 minutes. Chop the onion and poach it well in a frying pan with a tablespoon of oil. We will let it poach over low heat, so that it caramelizes a little.

Once well poached, season with salt and pepper, put it in a bowl and set aside. Cut the mushrooms into slices and add them to the pan. I usually start on medium heat and, when they release the water, I put it on high heat so that it is consumed. Once done, salt, add the onion and give it a turn to integrate both vegetables.

In a bowl put the 200 grams of beaten cheese, the 4 eggs, salt and pepper and beat well. Then, add the onion and mushrooms. Mix well. Add the grated cheese and beat again.

In a quiche mold, better if it is silicone, spread the broccoli and, on top, pour the mixture of the beaten cheese with the vegetables. Place in a preheated oven at 180° and bake for 20-25 minutes.
