First we wash the tomatoes and chop them into pieces. Then we chop a garlic and the shallots.

Put the tomato, garlic and shallots in the blender and blend well.

Heat a spoonful of Aove in a frying pan and add what we have previously crushed, salt, pepper, oregano and parsley to taste. You can add a little sugar if you do not like the acid taste.

We put it over medium heat for about 30 minutes until the tomato is done and the water is reduced.
