First of all, all the vegetables should be chopped and the piece of chicken breast should also be cut into small cubes.

Once we have all the chopped vegetables we will have to fry them in a pan with a little bit of EVOO.

We let the sofrito refuel and while in a pot we make the Chinese rice noodles as the bag tells us, in my case it said that once boiling water, let the noodles warm up for two minutes. After that, we drain it well and we will see them in the pan with the sofrito.

Finally, we heat everything in the pan and stir well to melt the flavors of the spices with the noodles.

And they are ready to serve! You can dress them with soy sauce that will give them more creaminess and much more flavor. I haven't added it because I didn't have it at home, but they still turned out spectacular 👩🏻🍳🤩
